@lepskitchen: ✨ LAZY GIRL DINNER ✨ One pan Satay Chicken & Rice 🫶🏼 Ingredients: * 1½ cups Basmati rice * 400mL coconut milk * 600g chicken breast, diced * 4 Tbsp peanut butter * 1 onion, finely diced * 450ml chicken stock * 2 Tbsp oyster sauce * 3 Tbsp satay sauce * 1 tsp chili crisp oil (optional) * 1/3 cup soy sauce * Salt & pepper, to taste * 2 Tbsp sesame oil * 220g green beans * 1 tbs white sugar Method: 1. Preheat the oven to 200°C. 2. In an oven-proof dish, mix together the satay sauce, peanut butter, sesame oil, oyster sauce, sugar, soy sauce, chili crisp, coconut milk, and stock until combined. 3. Add the onion, rice, green beans and chicken, tossing to coat everything in the sauce. Make sure everything is submerged in the liquid! 4. Cover with foil and bake for 45 - 60 minutes or until rice has cooked through. 5. Fluff before serving, then finish with coriander, a drizzle of chili oil if you like it spicy and a squeeze of lime.
