DAY 3 of How I Maximize Our Groceries - Sweet Garlic Baby Back Ribs + Sweet & Spicy Cold Noodles (Serves 3 Adults) 1. ONE-PAN SWEET GARLIC BABY BACK RIBS The secret: steam first to tenderize, then reduce the sauce and glaze everything in the same pan! Ingredients •2.5 lbs baby back ribs (set aside 3 pieces for kimchi stew — recipe in my previous post!) •1/4 cup soy sauce •1/4 cup agave syrup or 2.5 tbsp brown sugar •3 tbsp crushed garlic •2 tsp ground or freshly grated ginger •1 tsp ground black pepper •1/4 cup cooking alcohol or mirin (I used soju) Instructions 1. Mix all marinade ingredients and coat the ribs evenly. Refrigerate in an airtight container for at least 2 hours. 2. Add the ribs and marinade to a frying pan over medium heat. 3. Add 1/2 cup water, cover, and cook for 15–20 minutes or until fully cooked and tender. Add more water if needed. 4. Remove the lid and cook on high for 3–5 minutes to reduce excess liquid. 5. Continue cooking on high for 5–7 minutes, stirring as the sauce thickens and coats the ribs. 6. Lower to medium heat and cook for another 2–3 minutes until glossy and caramelized. Finish with a drizzle of sesame oil, if desired. 2. SWEET & SPICY COLD NOODLES This sauce works with almost any noodles, even spaghetti! My favorite is zaru soba. Noodle Sauce •2 tbsp soy sauce •2 tbsp agave syrup •2 tbsp apple cider vinegar •1 tbsp crushed garlic •1 tbsp ketchup •1/2 tsp yellow mustard •1 tbsp gochugaru (Korean red pepper flakes) •2 tbsp gochujang (Korean red pepper paste) Instructions 1. Cook your favorite noodles (about 3 servings) according to package directions. Rinse under cold water and drain well. 2. Thinly slice whatever veggies you have on hand. I usually use lettuce, cucumbers, onions, carrots, cabbage, bell peppers, or perilla leaves. 3. Toss the noodles and veggies with the sauce. Finish with a drizzle of sesame oil, if desired. A simple and delicious way to turn those random bits of leftover produce into another meal instead of letting them go to waste!
