Preheat oven to 400°F (200°C). 2. In a small bowl, mix minced garlic, olive oil, thyme, rosemary, salt, and pepper. 3. Rub the herb mixture evenly over the chicken thighs. 4. Arrange chicken thighs on a baking sheet and roast for 35-40 minutes until skin is crispy and cooked through. 5. Meanwhile, toss the vegetables with salt, pepper, and a drizzle of olive oil. Spread on a separate baking sheet. 6. Add to the oven and roast for 25-30 minutes until tender and slightly caramelized. 7. In a large pot, boil potatoes until tender, about 15 minutes. 8. Drain potatoes and return to pot. Add minced garlic, butter, and warm milk. 9. Mash until smooth and creamy. Season with salt to taste. 10.
