🥔 Ground Beef Stuffed Baked Potatoes This version boils the potatoes first, then bakes them so they’re creamy inside and golden on top. 😍 Ingredients * 4 large russet potatoes * 1 lb ground beef * 1 small onion, finely chopped * 2 garlic cloves, minced * 1 tsp paprika * 1 tsp garlic powder * ½ tsp onion powder * Salt & black pepper * 2 tbsp butter * ½ cup sour cream * ¼ cup milk, more if needed * 1½ cups shredded cheddar cheese * 1 tbsp olive oil * Chopped parsley or green onion for garnish Directions 1. Boil the potatoes: Wash the potatoes and leave the skins on. Place them whole in a pot, cover with salted water, and boil for about 20–30 minutes until tender but still firm enough to hold their shape. Drain and cool for a few minutes. 2. Cook the beef: Heat olive oil in a skillet. Add onion and cook for 2–3 minutes. Add ground beef and cook until browned. Add garlic, paprika, garlic powder, onion powder, salt and pepper. Cook another 2 minutes and drain any extra grease. 3. Prepare the potatoes: Cut each potato in half lengthwise. Carefully scoop out most of the inside, leaving about ¼ inch of potato around the skin so the shells don’t break. 4. Make them creamy: Mash the scooped potato with butter, sour cream, milk, ¾ cup cheddar, salt and pepper. Add another splash of milk if needed—the filling should be creamy but not runny. 5. Stuff: Spoon the mashed potato back into the potato skins. Add a generous amount of seasoned ground beef on top and sprinkle with the remaining cheddar. 6. Bake: Place on a baking sheet and bake at 425°F for 15–20 minutes. Broil for 1–2 minutes at the end until the cheese and potato edges are beautifully golden.
