@alifoodandthings: The best roast chicken with butter beans and leeks 1 large chicken (I brined mine) 4 large leeks washed and roughly chopped 1 large onion sliced 1 lemon halved Fresh herbs-I went for a little parsley, thyme, rosemary and bay 1 bulb of garlic Olive oil Salt Black pepper Paprika 175mls-200mls white wine 140mls double cream Grated Parmesan around 120g but do what you like 1 large jar of butter beans (mine were gifted) Chives Chopped parsley I served mine with a a nice salad with red onion, tomatoes, parsley, salt, red wine vinegar and olive oil. French beans and a djon dressing is also great.
