كويرات الكفتة بالجبن و المفاجئة في الأخير 🇲🇦 ‎المرقاس في المغرب: ماذا لو بدأت الحكاية في القرن الثاني عشر؟ ‎في كتاب الطبيخ في المغرب والأندلس (القرن الثاني عشر)، يذكر المؤلف اللحم المدقوق والجبن الرطب في وصفة تُشكَّل فيها النقانق ‎في هذا الريل أحتفظ بالمكوّنات نفسها، لكنني أحوّلها إلى كرات كفتة محشوة بالجبن، تُقلى وتُغَمَّس بصلصة خفيفة ‎وللتقديم: بطاطس مهروسة في القاع، وكفتة + صلصة من فوق. بسيط، موثَّق. Merguez in Morocco: what if the story began in the 12th century? In the Kitāb aṭ-Ṭabīkh fī al-Maghrib wa-l-Andalus (12th c.), the author cites pounded meat and fresh cheese in a recipe where sausages are formed. In this reel, I keep the same ingredients but turn them into cheese-stuffed kefta balls, fried and coated with a light sauce. For plating: purée on the bottom, kefta + sauce on top. Simple, historical, effective. Merguez au Maroc : et si l’histoire commençait… au XIIᵉ siècle ? Dans le Kitāb aṭ-Ṭabīkh fī al-Maghrib wa-l-Andalus (XIIᵉ s.), l’auteur cite la viande pilée (اللحم المدقوق) et le fromage frais (الجبن الرطب) dans une recette où l’on… façonne des saucisses. Dans ce reel, je garde les mêmes ingrédients… mais je les détourne en boulettes de kefta farcies au fromage, frites et nappées d’une petite sauce.
