Ingredients * ½ cup oil * 1 tsp cumin seeds * 4 whole dried red chillies * 6 garlic cloves, chopped * 1 tsp crushed coriander seeds * 3 tomatoes, blended * Salt, to taste * ½ tsp turmeric powder * 1 tsp red chilli powder * 1 tsp crushed red chillies * 1 kg potatoes, cut into thick slices * ½ chicken cube, optional For Finishing * ½ tsp black pepper * 1 tsp kasuri methi * 1 tsp kalonji (nigella seeds) * 1 tsp mustard seeds * Green chillies, sliced * Fresh coriander leaves * Juice of 1 lemon Method In a pressure cooker, heat ½ cup oil. Add cumin seeds, whole dried red chillies, chopped garlic, and crushed coriander seeds. Sauté for about 30 seconds until fragrant. Add the blended tomatoes, followed by salt, turmeric powder, red chilli powder, and crushed red chillies. Mix well. Add the thickly sliced potatoes and ½ chicken cube, if using. Mix everything well until the potatoes are nicely coated in the masala. Close the pressure cooker and cook for 5 minutes on medium heat. Once cooked, sprinkle black pepper, kasuri methi, kalonji, and mustard seeds. Finish with fresh green chillies, coriander leaves, and a generous squeeze of lemon for the best flavor.
