My favourite has to be the Cochinillo Asado. The Spanish suckling pig had that lovely contrast of crisp, crackling skin and tender, juicy meat. I also enjoyed the refreshing Gamba Roja Crudo and comforting Paella de Marisco, both featuring organic produce from Ecolah, alongside the chargrilled Pulpo, before ending with Basque Burnt Cheesecake. Each course is paired with a cocktail or premium Fundador/Emperador brandy.
