Tbh in my personal opinion: if you can’t cook food without using like a dozen spices then you r not a good cook. A good cook can always make a dish taste good even with the simpelst ingredients

Less spicy and less greasy compared to their neighbors food, yes. Bland? No. Japanese food is one of the best tasting foods I've had, especially their umami taste.
