This pumpkin spice granola is the perfect addition to the fall breakfast of my dreams ☺️ Mix together: • 3 cups rolled oats • ¾ cup chopped almonds • 2 tbsp chia seeds • 1½ tsp pumpkin pie spice • 1 tsp cinnamon • ½ tsp salt Stir in: • ⅓ cup pumpkin purée • ¼ cup maple syrup • 3 tbsp melted butter or coconut oil • 1 tsp vanilla • 2 tbsp brown sugar Spread onto a parchment-lined baking sheet and press into an even layer. Bake at 325°F for 45–55 minutes, stirring once halfway through. The pumpkin can add lots of extra moisture, so if it still feels moist, continue baking in 5–10 minute increments until completely dry and golden brown. The oats might still be slightly soft, but they’ll harden as they cool.
