Honey Brown Sugar Glazed Salmon with Creamy Spinach Cheese Filling Ingredients: 4 salmon fillets 6 ounces each 1 cup chopped spinach 4 ounces cream cheese softened 1/2 cup shredded mozzarella 3 tablespoons brown sugar 1/4 cup grated Parmesan 2 tablespoons melted butter 2 garlic cloves minced 1 tablespoon Dijon mustard 1 tablespoon soy sauce 1 tablespoon lemon juice 1/2 teaspoon paprika 1/2 teaspoon garlic powder 1/4 teaspoon smoked paprika 1/2 teaspoon salt 1/4 teaspoon black pepper Directions: 1. Preheat the oven to 400 degrees Fahrenheit and position the oven rack in the center to ensure even cooking. 2. Lightly grease the bottom and sides of a 9 by 13 inch baking dish with cooking spray or a small amount of butter to prevent the salmon from sticking. 3. Remove the salmon fillets from their packaging and pat them thoroughly dry with paper towels to remove excess surface moisture and help the seasonings and glaze adhere properly. 4. Place the softened cream cheese into a medium mixing bowl and stir until smooth and creamy. 5. Add the chopped spinach shredded mozzarella grated Parmesan and minced garlic to the cream cheese. 6. Sprinkle a small portion of the salt and black pepper into the filling and stir thoroughly until the spinach garlic and cheeses are evenly combined into a thick creamy mixture. 7. Place each salmon fillet on a clean cutting board and use a sharp knife to carefully cut a deep horizontal pocket into the thickest side of the fillet. 8. Make sure not to cut completely through the opposite side or bottom of the salmon so the filling remains securely inside during baking. 9. Divide the prepared spinach and cheese filling into 4 equal portions. 10. Carefully spoon one portion of the filling into each salmon pocket gently pressing it inside without tearing the fish or overfilling the opening. 11. Arrange the stuffed salmon fillets in the prepared baking dish leaving a little space between each piece to allow heat to circulate evenly. 12. Sprinkle the paprika and remaining salt and black pepper evenly over the tops and exposed sides of the salmon fillets. 13. In a separate small mixing bowl combine the brown sugar melted butter soy sauce Dijon mustard and freshly squeezed lemon juice. 14. Add the garlic powder and smoked paprika to the glaze mixture. 15. Whisk thoroughly until the brown sugar is mostly dissolved and all the ingredients are blended into a smooth glossy sauce. 16. Using a pastry brush generously coat the top and sides of each stuffed salmon fillet with the prepared brown sugar glaze. 17. Spoon any remaining glaze around the salmon in the baking dish allowing some of the sauce to collect at the bottom. 18. Place the baking dish uncovered on the center rack of the preheated oven. 19. Bake for approximately 15 to 18 minutes depending on the thickness of the salmon fillets until the fish is cooked through and the spinach cheese filling is hot and melted. 20. Check the thickest part of the salmon with a food thermometer and confirm that it reaches an internal temperature of 145 degrees Fahrenheit. 21. Once the salmon is cooked switch the oven setting to broil and allow the top heating element to become hot. 22. Return the baking dish to the oven and broil for approximately 1 to 2 minutes until the brown sugar glaze becomes glossy lightly caramelized and golden brown. 23. Watch the salmon carefully during broiling because the sugar in the glaze can darken and burn quickly. 24. Carefully remove the baking dish from the oven and place it on a heat resistant surface. 25. Allow the stuffed salmon fillets to rest for approximately 2 to 3 minutes so the filling settles slightly and the fish remains tender and juicy. 26. Spoon the warm caramelized glaze and cooking juices from the bottom of the baking dish over each salmon fillet. 27. Transfer the stuffed salmon to individual serving plates using a wide spatula to keep the delicate fish and creamy filling intact. 28. Divide into 4 equal servings and serve warm
