Crispy skin-on cowboy butter chicken + fries 🤠 ad @All Things Butter have just launched in @Tesco so you can get your quality butter fix a little easier 💛✨ Recipe: -Pat the skin-on chicken breast dry with kitchen paper, then season all over with 1 tsp smoked paprika, 1/2 tsp garlic granules, 1/2 tsp onion granules, salt and pepper. -Add the fries to a pan of salted boiling water and boil for 6-8 minutes until slightly softened but not falling apart, then drain well and leave to steam dry for a few minutes. -Add the fries to a bowl, spray lightly with olive oil and season with a little extra salt, smoked paprika and garlic granules, tossing until evenly coated. -Place the fries into the air fryer and cook at 200°C for 18-22 minutes, shaking halfway, until golden and crispy. -Meanwhile, place the chicken breast skin-side down into a cold non-stick pan, then turn the heat to medium-high and cook for 8-10 minutes until the skin is deeply golden and crispy as the fat renders down. -Flip the chicken and cook for another 5-7 minutes until cooked through, baste with 1 tbsp cowboy butter then remove from the pan and leave to rest. -Make your cowboy butter by combining 20g salted butter, 1 tsp Dijon mustard, 1/2 tsp smoked paprika, 1/4 tsp chilli flakes, 1 tsp lemon juice, 1 tbsp fresh chives and 1 tbsp fresh parsley. -Add 150ml chicken bone broth / stock to the same pan. Simmer for 4-5 minutes until the stock has reduced by about half, then stir in the cornstarch slurry and simmer until slightly thickened and glossy. -Turn the heat to low and whisk in the remaining cowboy butter until fully melted and silky. -Slice the chicken breast and serve alongside the crispy fries, spooning over the cowboy butter gravy.
