We orient north up because astronomers (primary those of the Middle East) charted stars and planets in the northern hemisphere. When planets were discovered to orbit the sun mostly along the same axis, that became the default relative orientation of our solar system; in that orientation, the earths northern hemisphere is “up” relative to that axis. Europeans helped refine that, but generally our orientation comes from eras and peoples prior to that. You’ll see north up world maps as early as Babylon circa 6th century BCE

It actually had largely to do with the North Star, and a little bit with European colonialism. Polaris, the North Star, doesn’t move. You had to look up to see the star, and so north became associated with up. And because of European colonialism, it became the widespread standard.
