Chicken Pot Pie This is my take on a classic chicken pot pie, but with a little twist. You get all the creamy, comforting chicken pot pie flavors, but instead of putting the puff pastry on top and digging in with a spoon, I flip the whole thing over so you get that crispy, golden puff pastry underneath and the creamy chicken filling on top. And the best part? You can make this with a rotisserie chicken from the grocery store, leftover chicken, or roast a whole chicken yourself. Ingredients * 1 rotisserie chicken, meat shredded and skin removed * 1 cup diced onion * 1 cup diced carrot * 1 cup diced celery * ¼ cup butter * ¼ cup all-purpose flour * ½ L chicken stock * 1 L milk and cream, combined * 1 cup frozen peas * Fresh thyme * Salt, to taste * Black pepper, to taste * Herb and garlic seasoning, to taste * Fresh parsley, chopped * Puff pastry, enough to cover your baking dishes * 1 egg, beaten, for egg wash * Flaky salt, for finishing Method Sauté the onion, carrot, and celery in the butter until softened. Add the flour and stir to coat the vegetables, then cook for a few minutes to cook out the raw flour taste. Slowly whisk in the chicken stock, followed by the milk and cream. Bring to a simmer and cook until the flour thickens the mixture. Add the frozen peas, thyme, salt, black pepper, and herb and garlic seasoning. Once thickened, fold in the shredded chicken and finish with fresh parsley. Taste and adjust the seasoning to your preference. Transfer the filling into small 8-ounce oven-safe dishes. Roll the puff pastry out to roughly twice the size of the dish—you want plenty of excess so it can drape over the sides. Egg wash the pastry, place it over the filling, then egg wash the top again and finish with flaky salt. Bake at 425°F conventional or 400°F convection until the pastry is deeply golden and cooked through, rotating as needed for even browning.
