Baked Apple Cider Donuts 🍎🍂 (recipe makes 12 donuts) Ingredients: 1½ cups (360g) apple cider 2 cups (250g) all-purpose flour, spooned & leveled or weighed (don’t pack it in) 1 tsp baking powder ½ tsp baking soda  1 tsp ground cinnamon ¼ tsp ground nutmeg Pinch of allspice  ¼ tsp salt 3 tbsp (42g) unsalted butter, melted 3 tbsp (41g) vegetable oil ½ cup (100g) brown sugar, packed ¼ cup (50g) granulated sugar 1 egg, room temp 1½ tsp vanilla extract or paste ⅓ cup (80g) sour cream, room temp 3 tbsp (45g) whole milk, room temp Cinnamon-Sugar Coating: ⅓ cup (76g) melted unsalted butter ½ cup (100g) granulated sugar 1 tsp ground cinnamon Instructions:  Pour the 1½ cups apple cider into a saucepan and simmer over medium heat until reduced to ½ cup (~20-30 minutes). Pour into a shallow heat-safe dish to cool to room temp. Preheat oven to 350°F and grease your donut pans. I used two 6-cavity donut pans. In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt. In a separate bowl, whisk together the brown sugar, granulated sugar, melted butter, and oil until combined. Add the egg and vanilla, whisk until smooth. Mix in sour cream, milk, and reduced apple cider. Gently fold the dry ingredients into the wet mixture until just combined. Don’t over mix. Pipe batter into the greased donut pans. Bake 10-15 minutes, or until a toothpick inserted comes out clean. Let donuts cool in the pan for 1-2 minutes, then transfer to a wire rack. While still warm (but not hot), brush or lightly toss the donuts in melted butter, then coat evenly in the cinnamon-sugar mixture.
