@snackingemily: Creamy Brie, soft and juicy spiced apples, and sweetness from honey. A truly magical appetizer that takes very little effort to make. Apples and honey signify welcoming a sweet new year! Ingredients For the roasted apples * 2 large or 3–4 small apples, Honeycrisp or Granny Smith work well. Chop into 1 inch pieces. * 2 tbsp butter, salted or unsalted * 2 tbsp honey, plus more for drizzling * ¼ tsp cinnamon, apple pie spice, or pumpkin pie spice * 1 tsp vanilla bean paste or vanilla extract * 1 tsp lemon juice For the Brie * 1 wheel of Brie, with the top rind sliced in a diamond pattern (don’t cut too deep just about ⅓ of the way through the Brie) Optional toppings * Fresh thyme * Candied pecans Directions 1. Preheat the oven to 375°F. 2. Add the apples, butter, honey, cinnamon or spice mix, vanilla, and lemon juice to a pie dish or medium baking dish. Toss to coat the apples evenly. Roast for 20 minutes. Remove from the oven, toss the apples, and then create a well in the center of the dish. 3. Nestle the Brie into the center. Drizzle with more honey and add the fresh thyme and candied pecans, if using. Bake for another 10–15 minutes, or until the Brie is warm and sufficiently melty. Serve immediately with crackers or crusty bread. Make-ahead tip: The roasted apples can be made ahead of time. Let them cool, then cover and refrigerate until you’re ready to bake them with the Brie. Bake for 15 minutes.
