A tree grows slowly, but its frequency travels fast. Today I’m planting a Ginkgo biloba. It’s a tree that carries so much meaning for me: inner harmony, resilience, quiet strength, peace, longevity. It’s one of those trees that feels like a bridge between worlds, between the person I’ve been and the one I’m growing into. As I place this young Ginkgo in the soil, it feels like more than a simple gesture. I’m planting a wish for balance. A reminder to breathe. A promise to take my time. I’m planting a frequency of peace, something gentle that can grow with me. The Ginkgo survived extinctions, storms, whole chapters of history. Yet it always found a way to keep reaching for the light. And I think that’s why this moment matters. It reminds me that slow growth is still growth, and that even the smallest intention can ripple far beyond the moment you plant it. This tree will take years to become what it’s meant to be, but its energy is already here, reshaping something inside me. A quiet shift, a soft beginning. AD. The kitchen café is officially open again for another school year 😂 Apparently packed lunches are made to order around here! The savoury muffins were a definite hit, so as promised, here’s the recipe to save for the packed-lunch rotation 👇 COLERAINE CHEDDAR, PEA & SWEETCORN SAVOURY MUFFINS 🧀 Makes 8 Ingredients 2 eggs 150ml whole milk 65g olive or vegetable oil 260g self-raising flour 1 tsp baking powder 200g Coleraine Medium Cheddar, grated 250g peas & sweetcorn Salt & pepper Golden Cow Easyspread Butter, for greasing Method Whisk together the eggs, milk and oil. Add the flour and baking powder and mix until just combined, then fold through the grated Coleraine cheddar, peas and sweetcorn. Grease the muffin cases/tin with Golden Cow Easyspread Butter and divide the mixture evenly between 8 cases. Air fry at 160°C for around 20 minutes, until golden and cooked through. Allow to cool before adding to lunchboxes. One order sorted… only another few hundred to go between now and June 😂 #GoldenCow #Coleraine #StringsAndThings #BackToSchool
