you can use wooden chopsticks set on each side instead of stabbing the potato,w also, the potato doesn't really need to be Yukon gold, or peeled. As diabetics, we do more sweet potatoes topped with crispy chickpeas seasoned with brown sugar and smoked paprika, roasted broccoli and peanut butter sauce.

Hasselback potatoes. Normally, you would steam or bake them first, then fry them to crisp the outside, also cheese is added into the slices to melt and caramelize.

There's a potato from Mat-Su Valley in Alaska, and these are in those big bags at the store that say Alaska Grown. I think that's where the mixup is. Yukon River is mostly assoc. with AK, Yukon Territory is Canada, so people think Yukon Gold must = Alaska.

:developed at Guelph university in Southern Ontario, marked as the buttered potato back in the 70s.it had a yellow colour and smooth texture.
We grew them on the potato farm i work on in the 80s.
i do not think the Russet was a good substitute for the Yukon Gold. The texture of a Russet is way different

In Sweden we have this Hasselbacks Potato dish that starts out very similarly, the way we cut the potatoes then is by placing them in a wooden spoon. Same effect, no dull blade.
