Peri-Peri Chicken with Pepe’s style Rice Ingredients: * 5 tbsp oil * 1 onion, chopped * 5–6 garlic cloves * 1 red bell pepper, cubed * 1 tbsp oregano * ½ tbsp black pepper * 1 tbsp paprika powder * 1 tbsp chilli flakes * Juice of ½ lemon * Salt, to taste * 2 chicken quarter pieces * ½ tbsp turmeric powder * 2 glasses water * 1 tbsp chicken powder * 1 tbsp biryani masala * 1 glass soaked rice * A handful of fresh coriander Method: 1: Sauté onion, garlic and red bell pepper in 5 tbsp oil. Add oregano, black pepper and paprika, then cook until soft. Blend with chilli flakes, lemon juice and salt. Reserve 5 tbsp sauce for the rice. 2: Make cuts in the chicken, coat with the remaining sauce and marinate for 2–3 hours. Air fry at 180°C for 20–25 minutes, turning halfway through, or until fully cooked. 3: For the rice, sauté ½ chopped onion in 5 tbsp oil. Add turmeric and the reserved peri-peri sauce, then cook until the oil separates. Add water, chicken powder, biryani masala and salt. Bring to a boil, add soaked rice and cook until tender.
