Heat the vegetable oil in a large oven-safe casserole dish over high heat. Place the beef in a large bowl and toss it with the flour, salt, and black pepper until evenly coated. Add the beef to the hot casserole dish and brown for 6–8 minutes, turning regularly so the pieces develop a rich golden-brown exterior. Work in batches if your pan is crowded. Reduce the heat to medium and add the chopped onion. Cook for 3–4 minutes, stirring regularly, until the onion begins to soften. Add the minced garlic and tomato paste. Stir well and cook for another minute. Pour in the brandy or whisky, followed by the Worcestershire sauce and beef stock. If you prefer a thicker gravy, stir in the cornstarch slurry and allow it to simmer gently for a few minutes. Stir in the heavy cream until the gravy becomes smooth and luxurious. Sprinkle with fresh parsley and a little extra black pepper. Serve hot with creamy mashed potatoes and steamed broccoli, green beans, or another favorite green vegetable.
