@mamaglocooks: Italian Minestrone Soup Ingredients 1. 2 tablespoons olive oil 2. 1 medium onion, diced 3. 3 cloves garlic, minced 4. 2 carrots, diced 5. 2 celery stalks, diced 6. 1 medium zucchini, diced 7. 1 cup green beans, cut into bite-size pieces 8. 1 can (14–15 oz) diced tomatoes 9. 2 tablespoons tomato paste 10. 1 can (15 oz) kidney beans, drained and rinsed 11. 1 can (15 oz) cannellini beans, drained and rinsed 12. 6 cups low-sodium vegetable broth 13. 1 teaspoon Italian seasoning 14. ½ teaspoon dried oregano 15. ½ teaspoon dried basil 16. ¼ teaspoon red pepper flakes, optional 17. 1 bay leaf 18. 1 cup small pasta, such as ditalini or small shells 19. 2 cups chopped spinach or kale 20. Salt and black pepper to taste 21. Fresh parsley or basil for serving 22. Freshly grated Parmesan, optional Directions 1. Sauté the vegetables. Heat olive oil in a large pot over medium heat. Add onion, carrots and celery. Cook for about 5–6 minutes until they begin to soften. 2. Build the flavor. Add garlic, zucchini and green beans. Cook another 2–3 minutes. Stir in the tomato paste and cook for about 1 minute. 3. Make the soup. Add diced tomatoes, broth, kidney beans, cannellini beans, Italian seasoning, oregano, basil, red pepper flakes and bay leaf. 4. Simmer. Bring to a gentle boil, then reduce heat and simmer uncovered for about 20 minutes. 5. Add the pasta. Stir in the pasta and cook according to package directions, usually 8–10 minutes, until al dente. 6. Finish with greens. Stir in spinach or kale during the last 2–3 minutes. Remove the bay leaf and season with salt and pepper. 7. Serve. Top with fresh basil or parsley and a little Parmesan. A squeeze of fresh lemon at the end is also really good. Mama Glo tip: For a thicker, almost restaurant-style broth, mash about ½ cup of the cannellini beans before adding them. They melt into the broth and make it creamy without adding cream. For meal prep, I’d cook the pasta separately and add it to each bowl. Otherwise, the pasta keeps absorbing the broth in the refrigerator and can get mushy.
