@tahini_dirtbag: Steak salad × Chilli Oil for the @whitemausu newsletter 🌞 Filmed this a couple of weeks ago but only getting around to sharing now - haven't gone back to brown hair yet! I tested this happily a couple of times, imo it's a perfect meal for warmer days when you want something satisfying but still light and fresh. Salad: 75g sugar snap peas, sliced on an angle 15 mint leaves 15 thai basil leaves 2 spring onions, sliced thinly ½ avocado, diced 8-10 shiso leaves, sliced thinly 1 handful of crispy fried onions Steak: 1 steak, 200-250g (I'm using rib-eye) 30g butter 2 cloves of garlic Salt Dressing: 2 TBSP @whitemausu peanut rayu ½ TBSP fish sauce ½ TBSP rice wine vinegar ½ lime, juiced Pinch of brown sugar Pinch of flakey salt Around 30 minutes before you want to cook, take your steak out of the fridge and let it come to room temperature - this helps you to achieve a more even cook. Prep the rest of your ingredients for the salad mix - feel free to play around here with additional ingredients, such as coriander leaves/stems, sliced red onion, or cucumber. Mix together the ingredients for your dressing. When you're ready to cook, preheat a heavy bottomed pan over a high heat. Lightly oil your steak, and season generously with salt on all sides. When the pan is HOT, add 2 tablespoons of neutral oil, and allow a moment to heat. Add in your steak, weighing it down with a chef's press or another small pan. For a 200-250g steak, I sear for 1.5-2 minutes per side, when shooting for medium rare. In the last 30 seconds, turn the heat down to medium, add a knob of butter and 2 cloves of garlic, and baste. Remove the steak from the pan, pour over the garlic butter, and allow to rest for at least 7 minutes. When ready to plate, spoon 2 tablespoons of the dressing over the salad mix, and gently stir to combine. Spread the salad mix as the base on your serving platter. Carve your steak against the grain, and plate on top of the salad mix. Finish with the remaining dressing, and serve immediately. Have a good day 🌞 #steak ##steak #Vlog#dinnere #salad

looks fire, chef. I read a tip somewhere that seasoning your steak hours in advance helps with flavor and sear. I've been doing that lately and the steaks have been the best I have ever made. you ever tried it? you a fan?
