Crispy Cheesy Beef Pockets + Loaded Sweet Potatoes + Lemon Chicken Skewers ( this on a Caesar salad!) Ground Beef Recipe(used in 2 recipes) Ingredients * 3 lbs ground beef * 1 large yellow onion, diced * 6 garlic cloves, minced * 3 tbsp chili powder * 3 tbsp cumin * 2 tbsp garlic powder * 2 tbsp paprika * 1 tbsp onion powder * 1 tbsp oregano * 1 tbsp salt * 1 tbsp black pepper * 6 tbsp tomato paste * 1½ cups beef broth 1. Cook onion + garlic in a skillet until soft. Add beef, cook until browned. 2. Add all spices + tomato paste, mix well. 3. Pour in beef broth, simmer until thickened. 4. Split beef in half. Set one half aside (for sweet potatoes). 5. To the remaining half, add: * ½ cup red bell pepper * ½ cup green bell pepper * ½ cup corn Crispy Cheesy Beef Pockets * Beef mixture (with peppers + corn) * Burrito-size flour tortillas * Mozzarella cheese Garlic Butter * 3 tbsp butter, melted * 2 garlic cloves, minced * 1 tsp dried parsley Instructions 1. Lightly dip tortillas in water, cut in half. 2. Layer cheese → beef → more cheese. Fold into triangles. 3. Brush baking dish with garlic butter, place seam-side down. Brush tops. 4. Bake at 400°F for 15–20 min, then broil 2–3 min until crispy. Marinate chicken 1 hour. 2. Toss in breading mixture, skewer. 3. Grill on medium-high, 4–5 min per side (165°F internal). 4.
