@homewithrosiee: EPISODE 6 September Soup Series | Spiced sweet potato and carrot soup🥕🍂 all september i’m making nutritious and vitamin packed soup to keep you full on a chilly, rainy day. As a beginner, making soups from scratch can seem daunting, but its so much easier than you think! Easy recipe below Ingredients 500g Sweet Potato 300g Carrot x2 Onions x3/4 Garlic Cloves 1 Litre of Stock (Chicken/Vegetable) 100ml Double Cream Salt & Pepper Half a Tsp of Cumin 1. Preheat your oven to 200 degrees. 2. Dice your sweet potatoes and carrots into similar sized shapes and add to a large baking tray. 3. Add olive oil, salt & pepper and cumin to the mixture in the tray and bake for 30 minutes. 4. Cut up your onions and fry them on a low heat for 10 minutes with the lid on. Make sure the onions do not brown. 5. Add your garlic and soften again for another 5 minutes. 6. Once the carrots and sweet potatoes are baked, add these to the onion/garlic mixture. 7. Add the stock and simmer for 15 minutes. 8. Blend and add cream at the end. #autumnal #soup #Recipe #sweetpotato
