BOTULISM: if you’re concerned about botulism, get a bulk pack of pool water test strips. Test the pH of your ferment, 4.0 and lower is too hostile for botulism to propagate

I usually put about 5lbs of honey in a jar. then fill the rest with water. sprinkle in some yeast. give it a shake and wait about 90-365 days.

You need to fill that headspace to the top otherwise you could accidentally grow botulism. These are powerful medicines. But you need to take proper safety precautions

garlic fermented in honey is best done in the dark and it takes 2 to 3 months to be complete. also you would need to burp the jar or buy self burping lids.

If something calls for honey, you can just skip everything else. Local honey (important) is doing a lot of the work.

Fun fact if you take 1 part of the apple cider vinegar mix and add 2 parts water and spray it on your hair once every two weeks and let it sit before you shower, you can help balance your scalp PH and the rosemary helps promote hair growth aaaand help fight dandruff. The thyme doesn’t really do much in this case but it won’t hurt it either lol.
