![i’m finally back from 🇨🇳! go through recipe with me~ [Chinese Tomato Eggs Stir-fry] 📌note: i’m back from China! and boyyyyy do i miss the food there 🥹🥹 Beijing to Shanghai to Xian, still this one particular dish stood out and it’s this delicious home-y tomato eggs stir-fry! so simple yet super addictive! Will definitely be part of my staple dish at home :D ingredients 📝 4 eggs salt chicken seasoning 4 tomatoes, sliced into wedges 1 capsicum, sliced oil 4-5 garlic cloves, minced 2 tbsp water 2 tsp soy sauce 1/2 tbsp oyster sauce 2 tbsp ketchup sugar white pepper sesame oil spring onion, finely chopped Process 🔪🥘 1. Prep the vegetables. 2. Crack 4 eggs into a bowl and season with salt and chicken seasoning. Beat eggs for a minute. 3. In a wok over medium heat, add 1 tbsp of oil then add the eggs. Scramble the eggs (i like mine soft so it took only about 2-3 mins) and remove from the wok immediately. Set aside. 4. Add 1 tbsp oil to the wok, turn up the heat to high and add the garlic, sautè abit then add the capsicum and tomatoes. Stir-fry for 3 minutes until they’re softened. Gently mash the tomatoes and capsicum while you’re at it. Add water. 5. Add the sauces and seasoning. Mix everything together, then add back the cooked eggs. Drizzle with sesame oil and chopped spring onion. Serve hot with rice!
