My husband said this topped the last burger i made😂 Ingredients Bacon Jam 200 g bacon 1 small onion, finely chopped 2 garlic cloves, finely chopped 1 chilli, finely chopped 2 tbsp brown sugar 1 tbsp maple syrup 1 tbsp Worcestershire sauce 1 tbsp apple cider vinegar Black pepper, to taste Burger Sauce 4 tbsp mayonnaise 2 tbsp ketchup 1 tbsp mustard 1–2 tbsp pickles, finely chopped 1 tbsp pickle juice 1 tsp brown sugar Salt, to taste Black pepper, to taste Double Smash Burgers 400 g beef mince, divided into 4 balls Salt Black pepper 4 cheese slices 2 brioche burger buns Butter, for toasting Sliced jalapeños 4 bacon strips Method 1. Make the Bacon Jam Start by frying the bacon in a pan over medium heat until cooked and nicely browned. Remove the bacon from the pan and leave the bacon fat behind. Add the chopped onion and garlic directly into the bacon fat. Cook until softened and fragrant. Add the chopped chilli and cook for another minute. Stir in the brown sugar, maple syrup, Worcestershire sauce and apple cider vinegar. Return the cooked bacon to the pan and mix everything together. Cook over a low heat, stirring occasionally, until the mixture becomes thick, sticky and jam-like. Remove from the heat and set aside. 2. Make the Burger Sauce In a bowl, combine the mayonnaise, ketchup and mustard. Add the finely chopped pickles, pickle juice and brown sugar. Season with salt and pepper, then mix thoroughly. Set aside until you're ready to assemble the burgers. 3. Smash the Burgers Divide the beef mince into four equal balls. Heat a heavy frying pan or griddle until very hot. Place the beef balls into the pan and immediately smash them down firmly with a spatula until thin. Season with salt and pepper. Cook until the edges are deeply browned and crispy, then flip. Place a cheese slice on each patty and cook until the cheese has melted and the patties are cooked through. 4. Toast the Brioche Buns Spread butter over the cut sides of the brioche buns. Toast them in the pan until golden brown and lightly crisp. 5. Cook the Bacon Fry the bacon strips until crispy and golden. Drain on kitchen paper. 6.
