@xavskitchen: STEWS of the MEDITERRANEAN 🍋 welcome to my new series where I’ll be taking you around the Mediterranean through the world of STEWS. each country has their own way of making stew with similarities and differences throughout the region, in this series, ill be taking you along a journey discovering the secrets and magic of Mediterranean stew making. This is part 7 and today we’re making a classic Balkan bean stew from Montenegro 🇲🇪 Full recipe below! * 1 can white beans (400g, drained + rinsed) * 3 chorizo sausages (plant based) * 1 beef fillet (plant based) * 1 white onion, chopped * 2 carrots, diced * 3 garlic cloves, chopped * 2 tbsp tomato purée * 1 veg stock cube with 2 cups water * 2-3 tsp smoked paprika powder * 2 bay leaves * Salt, to taste * black pepper * Sunflower oil * 2 tbsp oil * 2 tbsp plain flour * Water, to adjust as needed Heat a drizzle of sunflower oil in a large pan over medium heat. Add the chopped onion and carrots, season with a pinch of salt, and cook until softened and tender. Add the garlic, smoked paprika and tomato purée, followed by the chopped plant based chorizo and beef. Stir well and cook for another 2-3 minutes, allowing the flavours to develop. Stir in the white beans and add the bay leaves. Pour in the vegetable stock and bring the stew to a gentle simmer. Reduce the heat to low and simmer for around 5 minutes, stirring occasionally. While the stew is simmering, heat 2 tbsp of sunflower oil in a separate small pan over medium heat to make the roux. Add the flour and stir continuously. Add a few splashes of water as needed to help create a smooth consistency. Cook for approximately 3-4 minutes, stirring constantly, until the mixture develops a light brown colour. Once the roux is smooth and thick, stir it into the stew. Cook for another 1 minute, stirring gently, until the stew becomes slightly thicker with a rich, glossy consistency. Taste and season with salt and freshly ground black pepper as needed. Remove the bay leaves, take the stew off the heat, and serve with flatbread! #comfortfood #stew #onepotmeals #balkans #balkanfood

Orthodox Balkans (65% population) are not meat heavy - they follow the Orthodox Christian fasting calendar. In a normal week, animal products are permitted on 4 days and avoided on 3 days and completely abstain for many weeks before Easter, Christmas, August 15th. Beans, lentils, chickpeas, collard greens, vegetables are the staples.
