@simplyhealthy___: Ok. I think I’m getting close. Here is everything I did: let it sit out at room temp for 30 min. Wiped the moisture off then added salt to both sides and let it sit another 10 minutes. Wiped the moisture off again. Oiled the pan and BOOM. almost a great sear. Also I didn’t burn the butter this time! NY strip over a cabbage steak. #dinner #steak #cooking #protein #hothoney
i bought a stainless steel pan, used it once...it isnt silver anymore 😭

you need a dry brine, so heavily salt the steak and put in fridge uncovered for about 24 hrs ideally. minimum like 6 hrs. that will dry out the exterior enough for you to get a really crispy sear

Try searing the fat cap first. The fat will render down into the pan, and soak it back in when you sear the rest. Also try some rosemary and thyme when you get to the basting phase.

Use a steak weight, it will change the crust significantly. Other than that 😋

Use a weight! And if you want a better crust, salt it and let it sit uncovered in the fridge for a few hours beforehand. Draws the moisture out really well😋

If you wanna take it a step further leave the steak uncovered in the fridge overnight, it’ll remove even more moisture

Lemme help you out brother. Last thing you wanna cook is the steak so you can put steak seasoning on and in the butter and garlic and if you’re searing you want to double the amount of steak seasoning than when grilling. And I’m not talking about any seasoning. This stuff is the shiiiiii. Your welcome

You have to turn the heat up really high for like a minute after you’ve done the initial sear if you want a good crust
