I learned from one of your other videos that I was using waaaay too much water to cook my pasta. I made your sausage with olive oil/garlic sauce. The first time I made it, I used too much water and I couldn’t get it to emulsify properly because it wasn’t starchy enough. This time I paid attention and only used 3 cups of water and 1-1/2 Tbsp of salt to cook the pasta. WOW! What a difference! That sauce was creamy and silky and absolutely fantastic! Thanks, Chef Moe!! I learned a valuable lesson 😊

When I make KD (Kraft Mac n cheese for those south of the border) I always save a little pasta water, and add my milk, butter and cheese powder to that. aggressively stir that over medium heat until combined, then add my past back in and stir that a little until the sauce evaporates a bit of liquid until perfectly creamy.
