I've been looking to find the best cinnamon roll recipe and I found it on the first try. I used @Well Made by Kiley recipe and changed just a few things.. These are genuinely the fluffiest cinnamon rolls with the perfect cream cheese frosting. No stand mixer needed. Dough 3/4 cup milk, warmed to 110°F 1/2 cup granulated sugar, divided 2 1/2 tsp active dry yeast 1/2 cup Greek yogurt or sour cream, room temp 1/2 cup salted butter, very softened 2 eggs, room temp 1 tsp vanilla 4 1/2 cups bread flour or all-purpose 1 tsp salt Cinnamon Filling 1/2 cup salted butter, softened 3/4 cup light brown sugar 2 tbsp cinnamon 1 tsp vanilla 2 tbsp heavy cream for pouring over rolls before baking Cream Cheese Frosting 8 oz cream cheese, softened 1/4 cup salted butter, softened 3/4 cup powdered sugar 1 tsp vanilla Instructions Pour warm milk into a bowl, add 1 tbsp of the sugar and sprinkle the yeast on top. Stir and let sit 5 to 7 minutes until foamy. In a large bowl combine the remaining sugar, Greek yogurt, softened butter, eggs and vanilla. Stir to combine. Pour in the yeast mixture and stir again. Add the flour and salt and mix with a wooden spoon until a shaggy dough forms. Let it rest 5 minutes then turn it out onto a floured surface and knead by hand for 8 to 10 minutes until smooth and slightly tacky. If it's too sticky add 1 tbsp flour at a time up to about 3 tbsp. Place dough in a greased bowl, cover and let rise 30 to 45 minutes until doubled. While it rises mix the softened butter, brown sugar, cinnamon and vanilla for the filling until smooth. Butter a 9x13 inch pan. Flour your surface and roll the dough out to a large rectangle about 24x15 inches. Spread the filling evenly over the dough leaving a small border. Roll tightly starting from the long side. Cut into rolls about 2 inches wide and place cut side up in the pan. Cover and let proof 25 to 30 minutes until puffy. Preheat oven to 350°F. Warm the 2 tbsp heavy cream and drizzle over the rolls. Bake at 350°F for 20 to 22 minutes then turn the oven up to 375°F and bake another 5 to 7 minutes until golden. While they bake, beat the cream cheese and butter until smooth then add the powdered sugar and vanilla and beat until fluffy. Let the rolls cool 10 to 15 minutes then frost generously and serve. #cinnamonrolls #homemade #bakingfromscratch #fallbaking #creamcheesefrosting @Voluspa
