I have 3 words for y’all- twice baked plantains!! I am not kidding when I say that this is one of the best things I’ve ever made! I found these giant Hawaiian plantains (Hua Moa) and I know the moment I deemed off the skin I had to make twice baked plantains! I started out by baking the plantains in parchment paper with unsalted butter- I have had a new aversion to tin foil lately so if you see me using unbleached parchment paper for everything just know that’s why 😂 I then removed the meat from the bones and marinated those Korean short ribs with soy glaze, crispy garlic, the juice from pickled ginger, and jah Jan sauce. I kept it simple and pan fried those. Once the exterior of the plantains got a little crispy I cut into the center and lashed the middle of the plantains adding more butter and crème fraîche. Then I broiled the plantain until the butter melted! Finally, I added more jah Jan sauce to the center of the plantain, the cooked beef, pickled ginger, cilantro, chives, black sesame seeds, and edible flowers. The taste and texture of these plantains was definitely superior. It has been the closest thing I’ve had lately to a baked potato and my heart is really happy about that 🥹 It has been really hard finding out all of the things I can no longer eat but my life is much more enjoyable now that I know what was making me sick.
