Spinach Sauce Pasta 💚 PASTA MEAL PREP SERIES Episode 3. This one’s for our vegan friends, and for anyone who loves a bright, vibrant green sauce 🌱 Fresh spinach, coconut milk. And a little nutritional yeast magic✨ Ingredients: 28 oz – 800g fresh spinach  14 oz – 420ml light coconut milk  3.5 cups – 840ml vegetable stock  1 large handful fresh basil  8 garlic cloves  1.5 oz – 45g cornstarch or potato starch  1 oz – 30g nutritional yeast 2 tsp onion powder 1.5 tsp salt Freshly ground black pepper, to taste  Pinch nutmeg  2–3 tbsp lemon juice, optional  Instructions: 1. Rinse spinach and basil.  2. In a high-speed blender, combine spinach, basil, garlic, coconut milk, vegetable stock, cornstarch, nutritional yeast, onion powder, salt, black pepper, nutmeg, and lemon juice. Blend until completely smooth.  3. Pour the blended mixture into a large saucepan over medium heat.  4. Bring to a gentle boil, stirring constantly. Once bubbling, reduce heat and simmer for 2–4 minutes, stirring regularly, until the sauce thickens and becomes creamy.  5. Adjust seasoning to taste.  6. Let the sauce cool completely before freezing, this helps prevent separation and keeps texture smooth. Divide into 10 portions of 1 cup - 240ml and freeze.  It’s smooth, creamy, and surprisingly cozy. Plant-based, but deeply satisfying. And yes… it freezes beautifully 🧊 Which means you can make it once, portion it, and keep it ready for those long, busy days when cooking feels like a bit too much.
