You can make cookies that are anti inflammatory? YEP!! YOU CAN! 😍 Today’s recipe of the day is peanut butter chocolate chip cookies & they’re MARVELOUS. 🍪🥜🤤 — 🍪 Refined Sugar-Free Peanut Butter Chocolate Chip Cookies — Ingredients: (makes about 18 cookies) •	1 cup unsalted butter, softened •	1 cup crunchy peanut butter (no added sugar) •	2/3 cup maple sugar •	2/3 cup coconut sugar •	2 tbsp maple syrup (optional, adds chew) •	2 large egg •	2 tsp vanilla extract •	2 & 2/3 cup all-purpose flour •	1 tsp baking soda •	1 tsp baking powder •	1 tsp salt •	1 & 1/2 cup chocolate chips (I like the Hu brand) ⸻ Instructions 1.	In a large bowl, beat the butter, crunchy peanut butter, maple sugar, and coconut sugar until light and fluffy (about 2–3 minutes). 2.	Mix in the egg, vanilla extract, and maple syrup (if using) until smooth. 3.	Add dry ingredients to the wet ingredients and stir until just combined. 4.	Fold in the chocolate chips. 5.	Chill the dough. Cover the bowl and refrigerate for 30–45 minutes. This step helps prevent spreading and keeps the cookies chewy. 6.	Bake: •	Preheat oven to 350°F (175°C). •	Scoop 2 tablespoons of dough per cookie onto a parchment-lined baking sheet, spacing them a few inches apart. •	Bake for 15-17 minutes, until the edges are golden brown but the centers still look slightly underbaked. 7.	Cool and enjoy Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to finish cooling. — 🍪 Storage: •	Room Temp: Store in an airtight container for 3–4 days. •	Freezer: Once cooled, freeze cookies in a single layer on a baking sheet, then transfer to a freezer bag. Lasts 2–3 months. Thaw at room temp or warm in the oven at 300°F for 5 minutes. #cookies #cookierecipe #refinedsugarfree #chocolatechip #peanutbutter
