"Khao Soi" comes from the Burmese word "Khauk Swè" (ခေါက်ဆွဲ), which literally describes the process of making noodles—folding and pulling the dough. Khao Soi originated from the Burmese 'Khauk Swè' and was introduced to Thailand later."

Nαw. :
Khao Soi in Thailand is just a name but in Myanmar Khao mean whisk or fold ( meaning the noodles are make by whisking a egg or folding the dough) and Soi in Myanmar mean pull ( meaning pull like pulling the dough while making the noodles) so that’s literally a Burmese word

when adding the coconut milk, pour in a little bit and let it bloom!! it'll separate the oils from the milk, then add the rest!! it really elevates the flavor!!

Simple U say :
coconut milk is for finishing. You mixed too early and too much for that if you cook that your way.
Also i see fish sauce you put together with coconut milk. it's just wrong. the flavour will be disgusting.
you have to put fish sauce first. Stir and wait til the smell is gone. Then coconut milk gets in and stir again til you get the condense that you satisfy ( which is your way ).
