Meet the sourdough fall friends! 🍂🌽 I’ve been having way too much fun turning sourdough into little fall inspired friends, and this is just the beginning. More fall friends are coming soon! 👀 A few of you asked for a tutorial on my corn loaves, so here’s exactly how I made them: 🌽 Yellow sourdough: I used my normal sourdough recipe: 525g bread flour 340g water 125g active starter 12g salt I added yellow food coloring directly to the water before mixing, then mixed, did my stretch and folds, and let the dough bulk ferment as usual. 🌿 Green husk dough: For the husk, I made a smaller, stiffer low hydration dough: 160g flour 83g water 32g starter 3g salt Green food coloring Again, the coloring went directly into the water before mixing. I let this dough bulk ferment as usual as well. Once the yellow dough finished bulk fermentation, I divided it in half and shaped each piece into an elongated batard before cold proofing overnight. I put the green dough in the fridge overnight too. The next morning, I took the yellow dough out and gently shaped/pushed each batard into more of a corn-cob shape without completely reshaping the dough. I scored lengthwise first, then added horizontal scores across the entire loaf to create the individual kernels. For the husks, I rolled the green dough out into a rectangle and cut out triangles. I placed the triangles over the yellow cob, folded the tips down, and added a small piece of green dough at the base for the stem. I baked these individually at 450°F with the lid on for 23 minutes, then 425°F with the lid off for 8 minutes. Baking time will vary depending on the size of your loaves, so keep an eye on them. Once they were completely cooled, I added the little faces. 🥹 And that’s how the first fall friends came to life.
