Mint Chocolate Chip Ice Cream Scoop Cookies
Makes about 10 cookies
Ingredients
2 sticks (8 oz) butter, softened
1 1/2 cups powdered sugar
1 large egg
1 TB vanilla
3/4 tsp peppermint extract
4–5 drops Chefmaster Leaf Green gel food coloring
3 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 1/2 cups mini dark chocolate chips
Instructions
1. Cream the softened butter and powdered sugar until smooth. Scrape down the bowl.
2. Add the egg, vanilla, peppermint extract, and green food coloring. Mix until combined, then scrape down the bowl again.
3. In a separate bowl, mix the flour, baking powder, and salt.
4. Add the dry ingredients to the mixer and mix until just a little dry flour remains. Scrape down the bowl.
5. Add the mini dark chocolate chips and mix just until evenly incorporated.
6. Using a 1.3 oz scoop, slightly overfill it with cookie dough. Press the scoop down onto a parchment-lined sheet tray, allowing a small perimeter of dough to form around the edge. Release the scoop while pressing down to create the rough, rounded appearance of an ice cream scoop.
7. Freeze the shaped cookies completely. Once frozen, bake immediately or transfer them to a bag and keep frozen until ready to bake.
8. Bake directly from frozen at 350°F for about 15 minutes, adding a little extra time if needed. Baking from frozen helps them hold their ice cream scoop shape and texture.
9. Let cool and serve as is, or place one on top of an ice cream cone filled with mint chocolate chip ice cream for the full fake out.
