Once you have a good béchamel, you actually need less cheese because the sauce already gives you that rich, creamy, silky texture with a slight cheesy feel when it’s seasoned properly. So instead of loading your dish with cheese to get that creamy, luscious texture, the béchamel does a lot of the work for you. And the best part? Béchamel is basically the mother of so many sauces.
