Such great feedback from my homemade swap for Wraps video, thank you to all who've sent me messages saying they loved them. With all the chatter around protein bars lately I thought the next homemade swap video had to be protein bars! These bars are SO good - the texture, the chocolatey taste, everything is delish. There's no baking and it's just so ridiculously easy to make, you don't even need a weighing scales if you use the cup like me! These protein bars are not like most shop bought protein bars which are essentially ultra processed chocolate bars that are high in protein. These bars are extremely nutritious! The black beans add lots of fibre as well as essential vitamins and minerals like iron, magnesium, and folate, and phytonutrients. Each bar contains around 11g protein and a whopping 9g fibre (if you cut into 7 bars) and the high fibre content will help prevent sharp spikes and crashes in blood sugar. Store the bars in the fridge for up to 3 days or freeze. (thaw in the fridge the night before) Below is the full recipe and please let me know in the comments what you think and if you're going to give them a go!! The feedback really helps thank you. Ingredients: 1 tin of black beans, drained and rinsed 2.5 generous tbsp honey 2.5 generous tbsp raw cacao powder 2 generous tbsp peanut butter 1 cup/100g oats 1 tsp vanilla extract For the chocolate topping: About 4 squares of 70% dark chocolate (around 50g) 1/2 tsp coconut oil Method: 1. Add all the ingredients into a food processor (except for the chocolate topping ingredients!) 2. Blend until it forms a chocolate dough, if the batter seems too wet to be a dough then add a little more oats. 3. Turn the dough out onto a tray lined with parchment paper and press down and shape the dough into a rectangle of whatever thickness you'd like your bars to be! 4. Melt the dark chocolate with the coconut oil in a bowl over a saucepan of gently simmering water. 5. Spread the melted chocolate over the top of the bar and place into the freezer for 10 mins to harden before cutting into bars! Makes around 7 large bars or you can cut them smaller!
