Makes 2 sandwiches Ingredients 4 tbsp softened unsalted butter 1 tbsp fresh chopped parsley 2-3 tsp chopped garlic 1/4 tsp red pepper flakes 1/4 tsp salt 1/4 tsp black pepper 2 tbsp mayonnaise 4 slices sharp cheddar cheese (about 2 oz) 4 slices provolone cheese (about 2 oz) 2/3 cup shredded mozzarella cheese 4 slices artisan sourdough bread Directions Mix butter with garlic, parsley, salt, black pepper and red pepper flakes. Spread evenly on 4 slices of sourdough. Heat a pan on medium-low heat and add 2 slices, butter side down. Spread 1/2 tbsp mayonnaise on the other side of each slice. Put 2 slices of cheddar, 2 slices provolone, and 1/3 cup mozzarella on each of the two slices in the pan. Spread 1/2 tbsp mayonnaise on the other side of the remaining slices and put on top of the assembled sandwich butter side facing up. Cook until lightly golden brown and flip.
