What inspired the short rib inside Madame Vô's well-known pho? He first saw it on a tray at his future mother-in-law's house, at a family dinner, back when he and Yen were still dating. "It was like dinosaur ribs. Huge. It blew my mind." He put it on the menu because that is how they ate it at home, so that everyone who walks through the door gets to have the same moment he did.
