Back with yet another Turkish-Style Soup Recipe. Today we are making another household favourite.                  Turkish Mercimek Çorbası Ingredients * Red lentils * 1 onion * 1–2 potatoes * 1–2 carrots * Water * Salt, to taste For the sauce * Oil or olive oil * Turkish pepper paste (biber salçası) * Dried mint * Optional: a little pul biber/chilli flakes Method 1. Prepare the vegetables: Peel the potatoes and carrots and cut the onion, potatoes and carrots into large halves or chunks. Rinse the red lentils well. 2. Boil everything together: Put the lentils, potatoes, carrots and onion into a large pot and cover generously with water. Bring to a boil, then reduce the heat and simmer until the lentils and vegetables are completely soft, about 25–35 minutes. 3. Blend: Once everything is cooked and tender, blend the soup until completely smooth. Add a little more hot water if you prefer a thinner consistency. Season with salt. 4. Make the mint sauce: In a small pan, heat the oil. Add the pepper paste and fry it gently for a minute or two. Add the dried mint and, if you like, a little pul biber. Stir briefly until fragrant, being careful not to burn the mint. 5. Serve: Pour the hot soup into bowls and drizzle the pepper-paste and mint oil over the top. Serve with fresh lemon wedges for squeezing into the soup. The key to this version: nothing is fried at the beginning.
