Bihari Qeema Ingredients: * 650g beef mince * 2 onions, sliced * 5 tbsp oil * ⁠ 1 tbsp ghee * 1 tbsp green chilli paste * 2 tbsp ginger-garlic paste * ½ tbsp coriander seeds * ½ tbsp cumin seeds * ½ tbsp black pepper * 1 bay leaf * 1 cinnamon stick * 3 green cardamoms * 1 tbsp paprika powder * 1 tbsp salt * 3 tomatoes, blended/pureed * 3–4 whole green chillies * Handful fresh coriander * 1 piece hot charcoal for smoking Method: 1. Deep-fry the sliced onions until golden. Remove and drain on kitchen paper. 2. Blend the coriander, cumin, black pepper, bay leaf, cinnamon and cardamom into a coarse spice mix. 3. Mix the beef mince with green chilli paste, ginger-garlic paste, spice mix, paprika, fried onions and ghee. Marinate for 2 hours. 4. Heat 5 tbsp oil in a pan. Add the marinated mince and cook on high heat for 2–3 minutes. 5. Add tomato purée and salt. Mix, cover, and cook on very low heat for 10–15 minutes. 6.
