How to make Mabuyu. Ingredients. 1kg Baobab seeds (mabuyu). 1kg Sugar. 2 cups water. 1 tspn Cardamom powder (iliki). 1 tspn salt. 3 cups Baobab powder (unga wa mabuyu). Red food color. 1 tspn baking powder. Method. 1. In a pot, add the sugar and water. Stir to dissolve the sugar. 2. Cook the sugar on medium heat. Stirring occasionally. 3. Add the cardamom, food color and salt. Keep cooking the sugar until it starts to thicken. 4. To check if the sugar syrup is ready, rub a small amount between your fingers. It should be sticky. 5. Turn off the heat. Add the baking powder and stir to combine. 6. Add the hot syrup to the mabuyu. Stir to mix everything. Ensure all seeds are coated with the syrup. 7. Add the baobab powder gradually. Mix very well. The mabuyu should be slightly wet. Not completely dry. 8. Let the mabuyu dry completely. 9. Enjoy. *Do not cook the sugar for too long. Once it starts getting sticky it's ready. Cooking sugar too long will give dry mabuyu. Also don't undercook the sugar or the mabuyu won't dry. *Add the baobab powder gradually while mixing.
