Blending the vodka sauce (& calabrian chili of course) Recipe Pasta Ingredients * 2 shallots, minced * 3 garlic cloves, minced * 1/2 tube tomato paste * 1 scoop Calabrian chilies, or less to taste * 1/3 cup vodka * 1 jar passata * 1 cup heavy cream * 2 tbsp butter * 1/2 cup freshly grated Parmesan * 1 lb mezze pasta Pasta Instructions 1. Mince the shallots and garlic. 2. Add the shallots to a pan over medium heat and cook until translucent. Add the garlic and cook for 1 minute. 3. Stir in the tomato paste and cook it down for 1–2 minutes. 4. Add the Calabrian chilies and cook for another 1–2 minutes. 5. Pour in the vodka and let it cook off for about 2 minutes. 6. Add the passata, then stir in the heavy cream, butter, and Parmesan. 7. Blend the sauce with an immersion blender until smooth. A regular blender works too, as long as it can handle heat. 8.
