This is a Lao dish called Kao Poon Nam Gai made with red curry paste, coconut milk, and fragrant chicken broth with aromatics like lime leaf, lemon grass, and galangal. The real star is a very fragrant ingredient known as finger root or “krachai” which is in the ginger family. I think Lao noodle soups are so underrated and this is one of my favorites I’ve been eating since I was a kid. Recipe: 1. Take dark meat chicken with the bones in and gently boil in just enough water to cover. This should have lemon grass, galangal, lime leaf, and finger root. I also like garlic and onion too. 2. When the chicken is tender and cool, shred it and smash it with a mortar and pestle with one small can of red curry paste. 3. Sautee the chicken mixture in oil then add one can of coconut milk. 4. Add the strained chicken broth from the chicken you boiled. 5. Season with fish sauce, MSG, chicken bouillon, shrimp paste, and lime leaf. 6. Serve with kao poon noodles and toppings
