MIN BÄSTA BOLLO:  150 g sidfläsk, finhackat 1 stor gul lök, finhackad 2 morötter, finhackade 1 fänkål, (eller selleri if u prefer) finhackad 4 vitlöksklyftor, finhackade 800 g färs (brukar köra nöt men blandad funkar)  3 stora msk tomatpuré 2 msk balsamvinäger 2 tsk socker 2 burkar krossade tomater i bra kvalla (à 400 g) 2 dl rött vin 2-4 msk kalv/oxfond eller buljongtärning 2 lagerblad 1 tsk torkad timjan (eller rosmarin) Parmesankant (valfritt) Salt och svartpeppar Dash av cayenne 25-50 gram smör Förbered grönsakerna och sidfläsket. Hetta upp en stor gryta på medelvärme. Stek sidfläsket tills det blir gyllene och krispigt. Lägg i lök, morötter, fänkål och vitlök, och fräs på låg värme i ca 10 minuter tills de är mjuka och har fått lite färg. Tag av.  Bryn köttet i smör tills det fått en fin yta och det mesta av vätskan kokat bort. Tillsätt fläsket och grönsakerna igen. Rör ner tomatpurén och låt den fräsa i någon minut för att utveckla smaken. Addera socker & balsamvinäger och låt karamellisera. Häll i vinet och låt det koka några minuter tills det reducerats.  Häll i krossade tomater, buljongen, lagerblad, timjan och en dash av cayenne. Rör om ordentligt och låt såsen sjuda på låg värme i minst 2 timmar (gärna ännu fleeeer timmar). Rör om då och då och tillsätt lite vatten eller buljong om såsen blir för tjock. Det går också att köra i ugnen på låg temp och lämna ett par timmar. Jag brukar köra på 125 grader. Ta bort lagerblad, parmesankant och smaka av med salt & peppar.
