This is one of those little kitchen habits that saves me WAY more time than it seems like it should. Instead of chopping an onion every single time I make dinner, I buy several bags, chop them all at once, portion them out, and freeze them. Then when a recipe calls for diced onion, I grab a bag from the freezer and dump it straight in. No cutting board. No onion tears. No extra mess. And one less thing standing between me and getting dinner made. 🙌 I usually portion about ½–1 cup per bag, depending on what I normally use in a recipe. And here’s the part I learned is important: I triple-bag them. 😂 Otherwise, that onion smell can take over your freezer. Freezer Onion Prep You’ll need: * Onions — I do several pounds at once * Freezer-safe zip-top bags How I do it: 1. Peel and dice all of the onions. 2. Portion about ½–1 cup into individual bags. 3. Press out as much air as possible and seal. 4. Put the individual bags inside additional freezer bags. I triple-bag mine to help contain the onion smell. 5. Freeze flat so they’re easy to stack and grab. You don’t even need to thaw them! I use frozen onions straight from the freezer in soups, chili, casseroles, sauces, taco meat, skillet meals, and anything else where the onions will be cooked. They won’t have the same crisp texture after freezing, so I wouldn’t use them for something that calls for raw onion. But for cooked recipes? I honestly can’t tell a difference.
