Mongolian Ground Beef Noodles  Ingredients * 1 lb ground beef * 4 packages ramen noodles, seasoning packets discarded     or about 10–12 oz plain ramen or lo mein noodles * Salt and black pepper, to taste * 1 tbsp minced garlic * 1 head broccoli, cut into florets (optional) * Splash of water, for steaming broccoli * Green onions, sliced, for topping * Sesame seeds, for topping Mongolian Sauce * ½ cup low-sodium soy sauce * ½ cup beef broth * ⅓ cup brown sugar * 2 tbsp hoisin sauce * 1 tbsp minced garlic * 1 tsp fresh grated ginger or ½ tsp ground ginger * 1 tsp sesame oil * ½ tsp red pepper flakes, optional Cornstarch Slurry * 1 tbsp cornstarch * 2 tbsp cold water Directions 1. Cook the ramen noodles according to the package directions, leaving out the seasoning packets. Drain and set aside. 2. Add the ground beef to a large skillet and cook until browned, breaking it apart as it cooks. Season with a little salt and black pepper. Drain any excess grease if needed. 3. Add the garlic and let it cook for about 1 minute. 4. In a bowl, whisk together the soy sauce, beef broth, brown sugar, hoisin sauce, garlic, ginger, sesame oil, and red pepper flakes. 5. If using broccoli, add it right into the skillet with the beef. Add a splash of water, cover, and let it steam for a few minutes until cooked to your liking. 6. Pour the sauce over the beef and broccoli. 7. Whisk together the cornstarch and cold water, then pour the slurry into the skillet. Stir and let everything simmer for a few minutes until the sauce thickens. 8. Add the cooked ramen noodles and toss until everything is coated in that sauce. 9.
