Making cookie boxes for Christmas this year? Well… This peanut butter chocolate cookie recipe is gonna replace peanut butter blossoms this year in your Christmas cookie boxes. THEYRE THAT GOOD.  🍪🥜🍫 ⸻ Heavenly Chocolate Peanut Butter Cookies  🍪🥜🍫✨ Ingredients Cookies 	•	1/4 cup + 2 tbsp unsalted butter, room temperature (I forgot to say that in the video) 	•	3/4 cup creamy natural peanut butter 	•	1/4 cup maple sugar (plus extra for rolling)        •     Splash of milk 	•	1 cup coconut sugar 	•	1 large egg + 1 egg yolk 	•	Big splash vanilla extract 	•	1 cup all-purpose flour 	•	3/4 tsp baking soda 	•	1 tsp sea salt Chocolate Bottom 	•	1 cup semi sweet chocolate chips (or chopped high quality chocolate) 	•	Flaky sea salt for finishing ⸻ Instructions Make the Cookie Dough 	1.	In a large bowl, beat the butter and peanut butter together until smooth. 	2.	Add the maple sugar and coconut sugar and beat until fluffy, about 2 minutes. 	3.	Mix in the egg, egg yolk, and vanilla. Add in a splash of milk, too. 	4.	In a separate bowl, whisk together the flour, baking soda, and sea salt. 	5.	Add dry ingredients to wet and mix until a thick dough forms. Shape 	6.	Scoop 1½-tablespoon dough balls. 	7.	Roll each ball in extra maple sugar. 	8.	Place on a parchment lined sheet and gently flatten the tops just a touch. Bake 	9.	Bake at 350°F for 10-13 minutes, until edges are set and centers look soft. 	10.	Cool completely on a rack before dipping. ⸻ Temper the Chocolate (Double Boiler Method) A true temper: glossy, snappy, sets firm at room temp. Melt to 120°F 	11.	Set up a double boiler: heat 1–2 inches of water in a pot and place a heat-safe bowl on top (bowl shouldn’t touch the water). 	12.	Add all the chocolate to the bowl. 	13.	Stir constantly until the chocolate reaches 120°F (use an instant-read thermometer). Cool to 88–90°F 	14.	Remove the bowl from heat. 	15.	Stir continuously &/or add more chocolate to cool the chocolate down to 88–90°F — this is your tempering range for semi sweet chocolate. Tip: Keep stirring; the movement creates the stable crystals you want. Hold the Temp 	16.	If the chocolate drops below 88°F, place it back over the warm pot for just 1–2 seconds to bring it back into range. Don’t let it go over 90°F or you’ll lose the temper. ⸻ Dip the Cookie Bottoms 	17.	Dip the bottom of each cooled cookie into the tempered chocolate. 	18.	Let excess drip off, then place chocolate-side-up on parchment. 	19.	Sprinkle with flaky sea salt. 	20.
